LEMON MERINGUE ICE CREAM
Ingredients (Serves 1)
1 frozen banana
Zest of 1 lemon
1 tsp lemon juice
5 dates
1/2 cup coconut water
2 tsp desiccated coconut
Handful of blueberries (to serve)
Sprig of mint (to serve)
Desiccated coconut (to serve)
Method
Put the frozen banana, lemon zest, lemon juice, dates, coconut water and desiccated coconut in a blender and blitz until smooth. Spoon the blended mixture into a container suitable for the freezer and freeze for 20 minutes or so. Once frozen, spoon into a bowl and top with a handful of blueberries, some desiccated coconut and a sprig of mint!
